Top 10 Pastry Chefs Celebrate at ICE

Dessert Professional hosted the Top Ten Pastry Chefs of 2010 gala at ICE last night. The event honored the best pastry chefs in America. The ten chefs were honored by Dessert Professional Editor Matthew Stevens and emcee Food Network Sous Chef Miriam Garron, who can be seen on Throwdown with Bobby Flay (and she studied at ICE).

ICE’s own Pastry & Baking Arts Chef Instructor Michelle Tampakis was among the Chefs recognized. Other honrees included Robert Truitt of Corton in NYC, Christopher Boos of Dunkin Brands, Frank Vollkommer of The Chocolate Mill Pastry Shop and Café in Glen Falls, NY, Kimberley Bugler of 21 Club in NYC, Steve Evetts of New York Marriott Marquis, Yannis Janssens of Fontainebleau Miami Beach, Nicholas Lodge of French Pastry School in Chicago, Bill Foltz of L’Auberge du Lac Casino in Lake Charles, LA  and Roy Pell of The Phonenician in Scottsdale, AZ.

The evening also included an award for Gary Guittard of Guittard Chocolates who was inducted into Dessert Professional’s Hall of Fame.

Four of ICE’s kitchens were packed with people eager to sample the desserts. Chef Michelle made a gluten-free trio of cakes that included Carrot Cake, Chocolate Plum Cake and White Forest Cake as well as several different chocolates and a chocolate showpiece. Robert Truitt of Corton made a Rhubarb Bavarois with Sorrel Cucumber Granité and Pistachio Sable. Yannis Janssens of Fontainebleau Miami Beach made a Foret Noire with Manjari, Kirsch Chantilly and Griottines. All of the chefs made over 300 servings of their dessert, each an elaborate and delicious testament to the chefs’ skills.

We are beaming for Chef Michelle and her prestigious honor. Congrats to the Top Ten Pastry Chefs of 2010!
